Maple syrup season

I'm a little delayed in my posts but I did want to share one of our first Vermont weekend experiences back in February. We went to this sugar house for pancakes and to see some maple syrup being made. I wonder who figured out that boiling sap for a long long time results in this stuff?

When I served my mission in Quebec we went and watched maple syrup being made. Afterward we ate the traditional Quebecois maple syrup dish: eggs, pancakes, potatoes, sausages, with about a gallon of maple syrup poured on top. And I know I tend to exaggerate, but it really was a gallon.
